Elsewhere, Him What Knows is writing about Cipollini in Agrodolce. I’m not so refined, so all I can offer is a little something to warm yer cockles.

In these sad distracted times, it appears Pimms No 3 only occasionally comes onto the market, which is rather disappointing, and left me no choice but to reverse engineer. The likely ingredients were purchased, and various permutations and combinations were tested in the vestry.

Although I’m normally against animal testing, I felt the ends justified the means. The animals in question are the second basses from my church choir, who gave their imprimatur to the following.

1. 150mL of brandy, I used Waitrose own brand
2. 100mL of sweet vermouth, I used Martini Rosso
3. 50mL of orange liqueur, I used Cointreau
4. 1L of apple juice, just the cheap stuff from concentrate

Warm the apple juice until it’s almost boiling, decant into a jug, and add the booze.
